Evodia has unveiled Yops, a new line of fermentation‑grown flavour solutions designed to help brewers elevate the sensory quality of non‑alcoholic (NA) beers – one of the most competitive and innovation‑driven segments in today’s beer market.
Positioned as a next‑generation alternative to traditional hop‑ or plant‑derived extracts, Yops uses yeast fermentation to produce individual flavour molecules, including terpenes and other key aroma compounds. The result, according to Evodia, is a flavour system that behaves like part of the beer itself rather than an external addition.
Unlike conventional flavourings that are layered onto a finished beer, Yops is built from yeast‑generated molecules that naturally carry a fermentation‑derived character. This dual function – targeted aroma plus a beer‑native backbone – is designed to integrate seamlessly into modern styles such as hazy IPAs, wheat beers, and NA interpretations of classic Belgian profiles.
Evodia says the approach gives brewers greater precision, consistency, and control, while also offering operational benefits. Many breweries using Yops report improved yields when replacing part of their dry‑hopping regime, reducing losses without compromising aromatic intensity.
The launch includes three formulations tailored to high‑demand styles in the NA category:
1 Y‑Banana
Developed to solve one of the biggest challenges in NA brewing – replicating fermentation‑driven esters and phenols – Y‑Banana delivers the banana, bubble‑gum, and spicy notes expected in Belgian blondes and wheat beers.
“Yops provided strong banana and bubble‑gum esters, adding natural yeast‑driven aromas beyond what their maltose‑negative yeast could produce,” said Daniel Schappert, head brewer at Jopen in the Netherlands.
2 Tropical Grapefruit T‑1
A bright, citrus‑forward blend designed for hazy and modern IPAs. It combines grapefruit with fruity sulphur and green notes reminiscent of passion fruit, offering a clean way to complete or enhance biotransformation‑driven tropical character.
3 Hoppy H‑3
A hop‑centric formulation delivering a fresh hoppy backbone with mandarin and mango notes, ideal for IPAs, pale ales, and dry‑hopped lagers.
